Given that it is a hologram, whether or not the meatloaf has any nutritional value is unknown. However, many real life planktons gain energy from sunlight, like plants do. Considering how advanced Karen is, making a hologram of UV rays is not too far fetched. As we have seen Plankton (the character) "eat" things other than light in other episodes, odds are this is a more enjoyable way for him to use photosynthesis (Gain energy from sunlight)
